– 2 ripe mangoes, peeled, pitted, and diced

– 1/2 cup brown sugar
– 1/2 teaspoon ground cumin
– 1/2 teaspoon ground ginger
– 1/2 teaspoon ground turmeric
– Salt to taste
Instructions:
1. In a saucepan, bring the brown sugar and apple cider vinegar to a boil over medium heat. Stir until the sugar is completely dissolved.
2. Add the chopped onion, garlic, ginger, and green chili pepper (if using). Continue cooking until the onions are soft.
3. Add the diced mangoes and stir to coat them with the onion mixture.
4. Add the ground cumin, ground ginger, ground turmeric, and salt. Stir well to combine all the ingredients.
5. Reduce the heat and let the mango chutney simmer until the mangoes are soft and the mixture is slightly thickened. This usually takes about 20-30 minutes.
6. If needed, add additional water to achieve the desired consistency.
7. Remove the mango chutney from the heat and let it cool to room temperature.
8. Fill the cooled mango chutney into clean jars and store it in the refrigerator.
